Fermented a 1.066 OG IPA at exactly 65degF. This yeast took it down to 1.015 (a little higher than I expected). Flocculation is poor for me, even after a cold crash. Some pear fruity esters but relatively clean. Seems like it squashed the hop aroma just a bit. All said, it finished quickly and that was really the point. I'll definitely try it.
Batch is then racked through a centrifuge into a brite tank. For our lager strain, we ferment at 55F and d-rest to 60F at halfway to terminal gravity, then 5 days at 60F once fully attenuated. 2 days cold crash to 50F, 3 days cold crash to 32F, harvest, then PAY the tank and 3 more days at 32F. Centrifuge, carb, and package after that.
If you cold crash 2-3 days before bottling once your final gravity is reached, this should provide enough time for the technique to work. This also allows you plenty of time for any dry hopping (which should be done prior to cold crashing, generally between 7-10 days prior to bottling) and for the yeast to clean up some fermentation by-products. The ideal temperature you should reach is 35-40.
